How to Make Cucumber Water: Recipe, Ratios, Steep Time and How Long It Keeps
To make cucumber water, slice a washed 3 inch (8 cm) piece of English cucumber into about 25 thin rounds and add them to 1 liter (about 4 cups) of cold water. Refrigerate at least 1 hour, or 2 to 4 hours for fuller flavor. Lift the slices out after 10 to 12 hours and finish it within 2 days.
That is how to make cucumber water. Below: ratios for every container, steep and cut tables, four variations, and storage advice sourced to FDA and a university extension.
How to make cucumber water: the basic recipe
This cucumber water recipe fills a 2 quart jug.
Makes: 8 cups (2 quarts, about 1.9 liters). Prep: 5 minutes. Steep: 1 to 4 hours in the fridge.
Ingredients
- Half an English cucumber (about 6 inches, 15 cm)
- 8 cups (64 fl oz) cold water, tap or filtered
- Ice, to serve (optional)
Method
- Wash your hands.
- Rinse the cucumber under plain running water and scrub it with a clean produce brush. FDA advises against soap or produce wash.
- Trim both ends and slice into thin rounds, about 1/8 inch (3 mm).
- Put the slices in a jug, pour over the cold water and cover.
- Refrigerate at least 1 hour, or 2 to 4 hours for fuller flavor.
- Serve over ice.
- Lift the slices out after 10 to 12 hours (overnight) and finish the jug within 2 days, in the fridge.
English cucumber or regular cucumber?
Any cucumber works, but the type decides whether you peel it.
| Cucumber | Skin | Peel it? | In the jug |
|---|---|---|---|
| English (hothouse), often plastic-wrapped | Thin; small soft seeds | No | Clean, mild flavor |
| Persian and Kirby | Small and thin-skinned (Kirby is bumpy) | No | Handy for a single bottle |
| Regular slicing | Thicker, often waxed; big seeds | Yes if waxed or bitter, fully or in strips | Stronger, greener; taste a slice first |
Whichever you buy, trim the stem end. Bitterness sits mostly there and just under the skin, so trimming and peeling help. Some cooks prefer a garden cucumber's bolder taste, so it is a trade-off, not a mistake.
Rounds, ribbons or spears: how the cut changes the flavor
More cut surface means faster flavor, and the cucumber goes soft sooner.
| Cut | How | Flavor comes through | Best for | Lift out after |
|---|---|---|---|---|
| Thin rounds | Knife or mandoline, 1/8 inch | Steadily | The everyday jug | 10 to 12 hours (overnight) |
| Ribbons | Vegetable peeler, lengthwise | Fastest (most surface) | A jug for guests | About 4 to 6 hours (they go limp first) |
| Spears | Cucumber quartered lengthwise | Slowest | Narrow bottles, or a day bottle kept cold | End of the day, if it stayed cold |
Pressing the slices with a spoon speeds things up but clouds the water. These times are kitchen guidance, not safety limits. Out of the fridge and without ice, the 2-hour rule in the storage section applies whatever the cut.
Cucumber water recipe ratios, per bottle, liter and jug
Measure cucumber by length, since sizes vary. These English cucumber amounts give a mild to medium flavor.
| Container | Water | English cucumber | Thin rounds |
|---|---|---|---|
| 24 oz bottle | About 710 ml | A 2 inch (5 cm) piece | About 15 |
| 1 liter | About 34 fl oz (4 cups) | A 3 inch (8 cm) piece, about a quarter | About 25 |
| 2 quart jug | 64 fl oz, about 1.9 liters (8 cups) | Half, about 6 inches (15 cm) | About 50 |
| 1 gallon dispenser | 128 fl oz, about 3.8 liters | One whole cucumber | About 100 |
Food Hero, from Oregon State University Extension, uses about twice as much (half a cucumber per quart) for a stronger jug. For stronger, add cucumber or time; for milder, add water.
How long to steep cucumber water
| Time in the fridge | What you get |
|---|---|
| 15 to 30 minutes | Faint, mostly cold water |
| 1 hour | Light; the shortest steep recipes suggest (many say 2 hours) |
| 2 to 4 hours | Fuller flavor, the sweet spot for a jug |
| Overnight, 10 to 12 hours | Strongest; lift the slices out in the morning |
| Past 10 to 12 hours, slices in | The slices soften and the water can turn grassy or bitter |
Steep in the fridge, not on the counter. FDA advises refrigerating pre-cut produce and keeping the fridge at 40°F (4°C) or below, and says produce that needs refrigeration should not sit out for more than 2 hours. Citrus peel can turn a long steep bitter, so take lemon or lime slices out after about 4 hours.
Cucumber water variations: mint, lime, lemon and ginger
Amounts are per 2 quart jug (8 cups); add them with the cucumber.
Cucumber mint water
Add 10 to 12 spearmint leaves or 2 sprigs, clapped between your palms first. Mint darkens after about a day, so make this a one-day jug. With peppermint, start with fewer leaves.
Cucumber lime water
Add 1 lime, thinly sliced. Or squeeze the juice into each glass for a sharper drink without peel bitterness.
Cucumber lemon water
Add 1 lemon, thinly sliced, seeds and end pieces out, and pull it after about 4 hours. For what lemon itself adds, see lemon water benefits.
Cucumber ginger water
Add a 1 to 2 inch (2.5 to 5 cm) piece, peeled and cut into thin coins or lightly smashed. Ginger keeps getting stronger, so taste at 2 hours. It pairs well with lemon for a cucumber ginger lemon water.
For other fruit and herb pairings, see how to make water taste better.
Can you refill cucumber water with the same slices?
Yes, once. When the jug runs low, top it up with cold water and give it another hour in the fridge; the second round is lighter. Refill only if the jug stayed cold and the slices are still firm.
Count the 2 days from when you first cut the cucumber, so a refill does not restart the clock. That is a sensible rule built on Food Hero's guidance, not an agency rule. Food Hero also says not to mix batches: never pour a new batch on top of an old one.
After that, compost the slices, wash the jug and start fresh, using the steps in how to clean a water bottle.
How long does cucumber water last?
How long can you leave cucumbers in water? About 10 to 12 hours in the fridge, then lift them out and finish the water within 2 days. We could not find an FDA or USDA shelf life for cucumber water itself, so treat it like cut produce that needs refrigeration.
| Where it is | How long | Basis |
|---|---|---|
| In the fridge, slices in | 10 to 12 hours, then lift them out | Recipe guidance (a taste limit, not a safety limit) |
| In the fridge, strained, at 40°F (4°C) or below | Best the first day, up to 2 days | Food Hero (OSU Extension) plus FDA's fridge temperature |
| On the counter, at a picnic, or in a bottle without ice | 2 hours, or 1 hour above 90°F (32°C) | FDA's 2-hour rule for produce that needs refrigeration, applied conservatively |
| In an insulated bottle with ice | Finish it the same day, while it is still cold | Common sense |
That also answers how to make cucumber water without a refrigerator: steep it over plenty of ice in an insulated jug and finish it that day. Without ice, 2 hours. For the rest of a summer day, see hydration in hot weather.
Signs to tip it out
Tip it out if the slices turn slimy or see-through, or the water goes cloudy, smells sour or fizzes. Plain water keeps far longer, as does water expire explains.
Logging cucumber water in Water Goose
Cucumber water is water with slices in it, so log it with the water preset. There is no infused-water preset, and you do not need one. Logging takes three steps: pick the drink, choose the amount, confirm.
Log the glass or bottle you pour, not the jug. If you fill the same bottle daily, save it as a custom quick-add amount in ml or fl oz. Water Goose is free to download and look around; saving drinks, editing your history, and changing your goal, units or quick-add amounts need Water Goose Plus, sold as a monthly subscription or a one-time purchase.
Reminders are optional: you choose your active hours and frequency, then allow notifications on your device. They are scheduled locally, without a push token, Water Goose account or reminder schedule being sent to a Water Goose server. A reminder can double as a cue to pour a glass.
The history calendar shows daily totals, goal completion and streaks, and entries stay on your device with no account. More in how to track water intake; for other drinks, see the most hydrating drinks, ranked.
Frequently Asked Questions
Why should you put cucumber in your water?
For the taste: a cool, fresh flavor makes plain water easier to finish, and that is the honest benefit. Cucumber is about 95% water (see how much water is in food), but a few slices add little beyond flavor.
Does cucumber water help you lose weight?
No. Cucumber water has almost no calories and does not burn fat. Drunk in place of a sugary drink, it means fewer calories from that drink, and that is the whole story.
Which is better, lemon water or cucumber water?
For hydration, neither: both count like plain water. Lemon adds a little vitamin C and some acid, and cucumber is milder, so pick the one you will drink, or use both. Lemon water does not burn fat either.
How is cucumber water different from agua de pepino?
Agua de pepino, or cucumber agua fresca, blends cucumber with water and lime, then strains it, and is often sweetened. It is fuller and greener, with far more cucumber per glass. Cucumber water only steeps slices.
What does cucumber water taste like?
Cool, mild and faintly green, more a hint of melon than a bite of cucumber. If it tastes bitter, peel waxy skin, trim the stem end and shorten the steep.
Is it okay to drink cucumber water daily?
Yes. It is water with flavor, so it counts like plain water. Make a fresh jug every day or two instead of topping up an old one; a week of it does what a week of plain water does, with more flavor.
Make a jug, not a project
Cucumber, cold water and a couple of hours in the fridge: that is the recipe, and the rest is taste. A cold jug that tastes of something is one of the easier ways to drink more water.
If you would rather not count glasses from the jug in your head, Water Goose keeps the total. It is on the App Store for iPhone and on Google Play for Android.
